Inspection Information Observations t# of New Observations t# of Resolved Observations Inadequate Cooling and/or Refrigerated Storage of Potentially Hazardous Food(s) RESOLVED: The walk-in freezer is now keeping foods frozen, however the temperature still fluctuates largely when the door is opened. Freezer measured at approx.-7C at time of inspection. Ensure you monitor the temperature of this freezer as foods are to be kept frozen at -18C. 1 t1 Inadequate Cooling and/or Refrigerated Storage of Potentially Hazardous Food(s) OUTSTANDING: Top portion of the prep cooler (where foods are placed in inserts) across from the kitchen grills was found to hold some foods at approx.8C at time of follow up inspection. Ham was discarded. The Operator stated that a permament cover has been ordered which will stay ontop of the inserts and keep foods cool, as the heat lamps that are directly above this portion of the cooler are likely a contributing cause to the warm temperatures. All potentially hazardous foods must be stored at 4C or less at all times to prevent the growth of bacteria.
